Why is two anchor outputs in Lightning Network- LN?

Why do you need two anchor outputs in LN transactions? Isn’t it more effective that someone can spend?

Basically, it is impossible to fix it due to complete RBF (you can replace anchor spending). Also, is it no longer needed to develop CPFP?

Is there any other reason now?
